  1. Take two small beetroots, rinse well with water and peel the skin of them. Chop them into big pieces. Heat kadai and pour oil. Add fenugreek seeds and cumin seeds.
  2. Now add chopped beetroot pieces and sauté them on low flame.
  3. Add garlic flakes and green chilies and sauté for two minutes. Also add kasuri methi leaves.
  4. Mix thoroughly and sauté till it’s completely done. Switch off the flame and allow to completely cool down.
  5. Transfer the sautéed mixture into a mixer grinder and add required amount of salt, turmeric.
  6. Use only pulse button while grinding to retain nice texture.
  7. Heat kadai and pour oil for tempering. Add cumin, mustard, Bengal gram and black gram. When mustard splutter add broken red chillies and switch off the flame. Pour the tempering onto the prepared beetroot methi chutney. This is a great accompaniment to hot steamed rice.
